The Best Buffalo Chicken Bowl

A tasty bowl of ground buffalo chicken, paired with bacon, blue cheese, celery, match stick carrots, avocados and cauliflower rice! So much flavor and goodness in each and every bite!

Ingredients
  

  • 1 head Lettuce romaine**
  • 1 bag Cauliflower riced
  • 1 box Cherry tomatoes sliced
  • 6 pieces Bacon smoked or baked
  • 1 Avocado diced
  • 1 bag Carrots cut in match sticks
  • 3-4 Green Onions sliced
  • 1 lb Chicken ground
  • 1 container Blue Cheese crumbled
  • 1 stalk Celery sliced

Instructions
 

  • Start by drizzle a sauté pan with avocado oil. Add 1 lb of ground organic chicken and sauté until fully cooked. Add .5 cup to 1 cup buffalo sauce depending on how saucy you like it.
    While the chicken cooks, sauté the cauliflower rice with a little avocado oil, salt & pepper. I like a bite to my rice so I just sauté until warm.
    Slice the celery, tomatoes, lettuce, and green onions and set aside.
    Prep bacon and dice the avocado. I like to smoke my bacon but if I’m low on time I’ll throw it in the oven on 400 until crisp. Chop to the desired size and set aside. 
    Start assembling your bowl & top it with olive oil and balsamic, ranch or blue cheese dressing.
    I like to mix everything up so I can get some of these delicious ingredients in every bite.
