Triple Cheese, Honey, Kimchi, Tortilla Fold! I don’t know why I waited so long to try a Tortilla Fold but I can honestly admit I am hooked. These are so easy to make & pack so much goodness into each and every bite.
I was craving my favorite quesadilla from Funky Taco in Boise & decided to recreate it at home. Thank goodness Siete Foods makes burrito-sized tortillas, I wanted all the room to pack in this deliciousness. I used Gouda, Aged Cheddar & Parmesan in this tortilla fold with Mother-In-Law Kimchi, one of my personal favorites. Cooked it up on my skillet & then topped it with micro-greens & the very best McIntyre Pasture honey.

Triple Cheese Honey Kimchi Tortilla Fold Ingredients
- Cheese, pick 3 of your favorites
- Honey, love getting mine from McIntyre Farms
- Kimchi
- Micro-Greens
- Chili Onion Crunch Sauce from Trader Joe’s
- Siette Tortillas
Directions
- Grate your cheese or buy already shredded cheese. Place all ingredients out on the counter so that you can get everything ready to go.
- Heat up a pan and get to creating. Place all the cheese on the tortilla and then the kimchi. Fold it up & place it on the hot pan. You will want to keep it on one side until crisp and then flip it.
- Once crisp on both sides, place on a plate and drizzle with honey and micro greens. Enjoy!
If you are wanting a bit of kick with this flavor combo I recommend drizzling a little Trader Joe’s chili onion crunch. It paired so nicely with the sweet honey. This is a must-make! Don’t wait too long to make this tortilla fold. It comes together quickly & with simple ingredients, yet packs insane flavor!
Be warned you will never go back to making plain quesadillas after tasting this deliciousness
