Living in Idaho I feel I need to embrace and really step up the potato game. These Smoky Herb Potatoes are on par with being a mouth full of flavor and leaving you fully satisfied with each bite! I love the combination of smokiness and herbs coming together to create this dish!
These might be the easiest potatoes you ever make but also you might find them to be highly addictive so be warned they could become a weekly menu item!
There is something so satisfying to have a crispy potato wrapped in a mustardy, herby sauce. Or at least I feel that way with these herby potatoes. I have been a Traeger owner for about a year now and it has become my go to for many food items. I think that it just steps up the flavor game and gives it that edge that you are looking for. If you don’t have a Traeger don’t worry about it, no need for FOMO and I promise I tried these in the oven and I thought they turned out really delicious as well.

Smoky Herb Potato Recipe
- 2 lbs Red Potatoes
- 2 Tbsp Fresh Dill, minced
- 3 Tbsp Avocado Oil ( I used Chosen Foods Brand)
- 1 Tb minced Garlic
- 2 Tbsp Dijon Mustard
- Couple cracks Black Pepper & Sea Salt

Preparation Instructions
- I chose really small Red Potatoes and sliced them in half for this recipe.
- Place sliced potatoes in a bowl and add all ingredients and toss well. You want all the potatoes to be coated with the delicious sauce.
- Preheat Traeger to 375.
- Place potatoes on a baking sheet lined with parchment paper and put in Traeger. Allow to cook for 35-40 minutes, depending on the size of your sliced potatoes it can take more or less time. You can test by stabbing with a fork and seeing if potatoes are tender. They should pierce easily when they are done and have a crisp outside.
- *** If you don’t have a smoker you can make these in the oven at the same temp and for the same amount of time.

I really love this recipe and all the flavors it brings together. It really is so easy to throw together as a side dish or as part of your meal prep for the week.
