I have to admit I am not a huge donut fan. I tend to be a bit picky on what its made of, toppings and if I am going to indulge on one it better be damn good! This…. This Smoked Strawberry Rhubarb Donut is damn good if I can say so myself.
I’m lucky enough to have a couple large rhubarb plants in my backyard garden. I actually have a funny story about rhubarb… I know, I know I will get to the recipe and all the ingredients soon, I promise. This story is worth it!
“My grandmother was in town visiting my family, my grandma was an unbelievable cook and could whip up the most delicious dishes. I walked in the door and there was a hot, fresh out of the oven strawberry rhubarb pie staring me in the face! I never turned down something my grandmother made so I quickly dished up a slice and consumed it just as quick. It was SOOOOO good, it took everything in me not to have another slice. About 10 minutes after consuming my slice I broke out in hives all over my body, my lips starting swelling (if you have seen the movie Monster In Law) and 30 seconds later I was in the car headed to the ER. Everything turned out ok but it was scary there for a bit. Lesson learned, ask grandma where she found the ingredients!“

Back to the Smoked Strawberry Rhubarb Donuts!
I had just harvested the rhubarb from my garden, had some fresh strawberries in the fridge and a new Traeger calling my name. It was a no brainer to throw everything together and see if I could bake it in the Traeger to get that extra smokiness.

Donut Recipe
- 2 cups GF Flour ( Namaste Foods)
- 1/2 cup GF rolled oats ( Trader Joe’s)
- 2.5 tsps Baking Powder
- 1/2 tsp Baking Soda
- 1/2 tsp Salt
- 1 tsp Cardamom
- 1/2 tsp Cinnamon
- 1/3 cup melted Coconut Oil
- 3/4 cup Pure Maple Syrup
- 1 large egg (McIntyre Pastures)
- 1 tsp Vanilla
- 1/3 cup coconut milk
- 2 tsps lemon zest
- 2 cups diced Rhubarb ( 1/2 inch diced)
- 1 cup diced organic strawberries
- 1/2 cup sliced almonds

Donut Instructions
- Preheat Traeger to 350 degrees & place the rhubarb and strawberries in for 20 minutes.
- Preheat oven to 350 degrees.
- In a medium bowl, add flour, oats, baking powder, baking soda, salt and spices. Mix Well.
- Add the egg, melted coconut oil, maple syrup, vanilla, milk and lemon zest. Give a good stir to combine.
- Add smoked rhubarb and strawberries to the batter and stir. Spoon the thick-ish batter into a well greased donut pan.
- Sprinkle the tip with almonds.
- Bake 20-25 minutes. Check doneness by inserting a skewer or small knife into the center, if it comes out clean they are done. Let cool.
- Using a knife, loosen the edges of the donuts to release.
