I am a newbie to Kabocha squash, but that being said, I might be its biggest fan. I don’t know how I have been missing out on this delicious squash! And, if I had to guess I would say once you try this Smoked Kabocha Herb Mash, you too will be a big fan.

Kabocha Squash or Japanese Pumpkin is known for its sweet taste, velvety texture and a long list of health benefits. To name a few, its chocked full of ant-oxidant beta-carotene, vitamin A and the skin if full of fiber.

With the temperatures still being a bit chilly this squash is the perfect side dish to any meal. Think of it as the healthier, more flavorful and gorgeous alternative to mashed potatoes.

Smoked Kabocha Herb Mash

  • Start with turning the Traeger on to 300 degrees.
  • Cut the Kabocha in half and scoop out seeds & rub with Avocado or Olive Oil.
  • Split the seasonings between each side of squash.
  • Cinnamon – 2 tsp
  • Ginger -1 tsp
  • Nutmeg-1 tsp
  • Cardamom -1 tsp
  • Sea Salt -1 tsp
  • Cracked Pepper -1 tsp
  • Pour 1 Tbsp Trader Joe’s Organic Bourbon Barrel Aged Maple Syrup into each side of Squash.
  • *** Optional Toppings**
  • Toasted Hazelnuts
  • Drizzle of Olive Oil or butter
  • Fresh cut rosemary or other herbs

Smoked Kabocha Herb Mash Directions

  • Place squash on the grill for 1.5 hours allowing it to get nice and smokey. Remove squash when it is really fork tender, like melt in your mouth tender. Spoon out the flesh into a bowl & stir to combine everything together.
  • You have a lot of options for topping your Kabocha Mash. I topped mine with a drizzle of Olive Oil, toasted hazelnuts and a sprinkle of fresh minced rosemary. Of course a couple cracks of black pepper and sea salt just for good measure were used as well.

I loved it so much I added it to my garden to make sure I had my own supply to choose from! The rich flavor of this dish is hard to beat and I really believe it would pair perfectly with just about anything.
