There is something so delicious about the rich pumpkin taste paired with the sweet dark chocolate and smokiness that comes from the traeger. These muffins pack in so much goodness in every bite, your taste buds will be shocked. I’d recommend doubling the batch, these muffins didn’t stay long in my kitchen, don’t be surprised if you are reaching for 1,2,3 at a time!

I was shocked to see pumpkin on the shelves already and of course, couldn’t keep myself from grabbing a couple to take home. This recipe included a new kind of pumpkin pie puree that I hadn’t tried before. I like the pumpkin pie mixes because they include all the spices I like to use already mixed in. This puree had all the spices as well as some organic sugar so I opted out of using any further sugar in this recipe. If you don’t use this exact puree I would say to add 1/4 to 3/4 cup organic coconut sugar is my personal favorite but you can use any sugar you’d like.

Smoked Pumpkin Pie Muffin Ingredients

  • 1 1/4 cup King Arthur Gluten-Free Flour
  • 2 tsp Bobs Red Mill double-acting baking powder
  • 1/4 tsp salt
  • 2 large eggs, room temp
  • 1 cup pumpkin pie mix (farmers market foods)
  • 1/4 cup coconut oil, slightly warmed to not have chunks
  • 1/4 cup coconut cream
  • 1/2 cup dark chocolate chips ( enjoylife)

Smoked Pumpkin Pie Muffin Directions

  • Combine dry ingredients in mixing bowl or kitchen-aid. Whisk together and then in a separate bowl whisk eggs and add them to the dry ingredients.
  • Add pumpkin pie mix, coconut oil, and coconut cream to a separate bowl and whisk together. Add to dry ingredients and mix until evenly combined. Fold in dark chocolate chips.
  • Spoon batter into each muffin cup. This recipe made 12 muffins and I filled the cups about 3/4 of the way full.
  • Place in the Traeger for 20-25 minutes. Using a toothpick to check when muffins are fully cooked and removing as soon as it comes out clean. These muffins came out super moist and the dark chocolate chips melty in every bite.
