I have been loving my Traeger lately as the temperatures heat up, it allows me to still bake but keep the house cool! These smoked dark chocolate brownies might be the catalyst to have you baking in your Traeger too! The smokiness paired with the rich dark chocolate creates such a complex, melt in your mouth flavor!

I love trying out new flours and with the quarantine it has been challenging to find some at times. I had picked up a new bag of King Arthor Flour and realized that they had their own dark fudgy Brownie on the back. It intrigued me but there were some ingredients that I wanted to switch up. I absolutely love using coconut sugar these days. It has a lower glycemic index than regular processed sugar meaning it doesn’t spike your blood sugar as much. The sugar also adds almost a carmel complexity to recipes. It is very subtle but I love it and have switched to using it almost always.

Also love using higher grade oils in my recipes and love using avocado oil because it really doesn’t have a taste and it is stable at higher cooking temps. I think it is always good to take a look at recipes and see how you can level it up by using high quality ingredients. Ok, let’s get to the good stuff and how to make these decadent smoked brownies!

Brownie Ingredients
  • 1 cup Flour (King Arthur GF Flour)
  • 1/2 tsp Baking Powder (Bob’s Red Mill)
  • 1/2 tsp Salt (Maldon Smoked Salt)
  • 3/4 cup Coconut Sugar (Big Tree Farms Bali)
  • 2/3 cup Cocoa Powder (Cocoa Metro)
  • 1 cup Semi-sweet chocolate chips (Enjoy Life Foods)
  • 3 large Eggs (McIntyre Pastures)
  • 1/2 cup Avocado Oil
  • 2 Tbsp Water
Brownie Making Instructions
  • Preheat Traeger to 350 and grease a 8″ or 9″ pan. I would recommend something metal to go into the smoker.
  • I used my kitchen aid for easy prep but any bowl would do to get this recipe made. Whisk together all dry ingredients and set aside. In separate bowl mix together all wet ingredients and slowly add to dry until evenly blended.
  • Scoop mix into pan and smooth the tip, maybe adding a couple more chocolate chips just for good measure and extra chocolate goodness.
  • Place in Traeger and cook for 15-18 minutes using a toothpick to check when done. I let the brownies stay in the Traeger as it shut down just to soak up any more smokiness. Once done, take them out and enjoy! I couldn’t wait to cut into these smoked dark chocolate brownies and have the melty chocolate on all fingers as I devoured my slice!

I highly recommend throwing these ingredients together and making this recipe! If you don’t have a Traeger you can totally use a conventional oven, your cook time will just be longer.
