I have to admit I am a breakfast lover! There is something so wonderful about starting your day with incredible food. This smoked bacon stacked breakfast sandwich will have you jumping out of bed, there’s no doubt in my mind.
There’s a local place in Boise called Certified kitchen and bakery that makes one of the best breakfast sandwiches. It inspired me to make my own. I did buy my sourdough english muffins from their shop. I’ve never tasted anything like them, and wanted to have a strong base making my sandwich.
I love a good fried egg with a runny yolk on my sandwiches. Some good cheese, fresh greens, little dijon mustard, mayo or hot sauce to bring it all together.

Don’t get me wrong, I love a great breakfast but I don’t want it to take all day to make. This sandwich packs the flavor without taking all day. Super easy to throw together, and can even be packed to go.
This smoked bacon stacked breakfast sandwich might have been the best I have ever had! The crispy sourdough english muffin was perfectly toasted. Personally, I am a crispy, double toasted type of person, what about you?
SMOKED BACON BREAKFAST SANDWICH INGREDIENTS
- 2 English Muffins highly suggest sourdough
- 2 Eggs
- 1 pkg Cheddar & Gruyere Cheese
- Jar Truffle Ghee
- Handful Spinach
- 1 pkg Bacon
- 1 jar Everything but the bagel seasoning

CONSTRUCTING YOUR BREAKFAST SANDWICH
I smoked the bacon on my Traeger to get that perfect crisp and added smoky flavor. I was on a time crunch so I placed them in the Traeger at 350 for 20 minutes until crisp. Cooked the egg in truffle ghee in a skillet until ready to go. I then started to build the breakfast sandwich, one delicious ingredient at a time.
I drizzle a little truffle ghee to each side of the toasted bread. Then added a couple slices of Trader Joe’s Cheddar & Gruyere cheese to get them melty. Topped with spinach, bacon & egg with a sprinkle of everything but the bagel seasoning. If you haven’t tried, it is a must!

This smoked bacon stacked breakfast sandwich might have to become a weekly staple. So easy to make and also easy to make a couple extra and freeze to defrost at a later time.
