Try to say that three times fast haha! It might be a mouthful of a name but this simple triple-berry bourbon crisp packs all the flavors in every bite. I wanted to sneak that “simple” in the name because it really comes together effortlessly. Using fresh, real ingredients creates a crisp that is well-rounded in all flavors. As soon as I spotted these berries on sale at the grocery I knew what I was going to make.
The weather has started to heat up and it’s starting to feel like spring. This means, all the backyard BBQs and friend gatherings are about to begin and I know what I will be bringing to the party. This simple triple-berry bourbon crisp is a fan favorite and you will be the talk of the gathering. It smells unreal while cooking and the taste will blow your tastebuds away! The combo just can’t be matched, be sure to grab the ingredients and get this on your plate ASAP!
Triple-Berry Bourbon Crisp Ingredients
I kept the ingredients simple for this recipe. In this recipe, I used gluten-free oats and flour, but feel free to swap to regular oats and flour. I also personally love coconut sugar in my baked items. It gives complexity and richness to the dish and creates a caramelly flavor when cooked. Again, if you would prefer to have regular sugar used in your recipe, feel free to swap to suit your preference. I choose to use organic berries since they aren’t able to be scrubbed and washed thoroughly. This is a personal preference to try to decrease the amount of pesticides in the produce I consume.
If you aren’t a fan of one of the berries, you definitely can switch them for cherries, raspberries, or peaches, there are a lot of options.
Triple-Berry Crisp Filling
- 2 cups fresh organic strawberries
- 1.5 cups fresh organic blackberries
- 2 cups fresh organic blueberries
- 2-4 Tablespoons Bourbon (you don’t have to include this but I love the flavor combo)
- 1/4 cup coconut sugar (sub for brown sugar or regular sugar)
- 1 tsp pure vanilla extract
- 1 small lemon zested
Start with washing all berries and laying them out on a towel to dry. Quarter the strawberries and place them in a cast iron pan. I used a smaller, 10-inch around, Lodge brand, cast iron skillet. It was the perfect size for the berries. Once you place the strawberries, pour the blueberries and blackberries on top. I used 3 Tablespoons of bourbon in my last batch of crisp. It was delicious but you could do 2 if want less bourbon taste or 4 if you would like more. Add the vanilla extract and coconut sugar and toss til combined evenly. Set this mixture aside and let it rest while you make the crisp.

Crisp Ingredients
- 2 cups gluten-free regular (not quick cook) rolled oats
- 1/4 cup plus 2 Tablespoons gluten-free flour
- 1/4 cup coconut sugar
- 1 tsp baking soda
- 1/2 tsp cinnamon
- 1/4 tsp cardamom
- 1/4 tsp salt
- 1 1/2 sticks unsalted butter (softened)
Place all dry ingredients into a bowl and mix until evenly combined. Add in butter and using your hands, combined into the flour mixture until crumble consistency. You want to sprinkle the mixture evenly over the berries to allow the juices to bubble up.
Preheat the oven to 375 and place the cast iron skillet on the center rack. If you are worried about the crisp bubbling over, place a sheet pan on the rack below the crisp to catch it. I haven’t had my crisp bubble over but can say it’s the worst when it does & it burns in your oven. So, let’s avoid that for you and take a precautionary measure. Bake the crisp for 25 to 30 minutes. You want to watch for the crisp to be golden brown and the fruit is bubbling up and the smell is wafting out of the oven. Pretty much when you can’t contain yourself any longer and all you want to do is eat the triple-berry bourbon crisp, that is the time to take it out of the oven.
You want to be ready to serve this piping hot crisp right out of the oven with a good scoop of vanilla bean ice cream or gelato. I love the pairing of the vanilla bean with the triple berries and bourbon crisp. I think they go so well together and I can’t wait for you to give it a try.
