The Cherry Tomatoes especially during the middle of summer just bring a smile to your face with the taste of the warm summer sun bursting from each bite. The crisp, fresh cucumbers add that crunch and cleanness to this salad that you can’t get anywhere else. I promise you will fall in love with this super simple yet burst of flavor with every bite salad. It has become one of those things you pretty much make any time you are starving but don’t have anything made yet. Takes about 5 minutes to throw together and even less time to devour!

Simple Tomato Cucumber Salad Ingredients

  • 1 lb Cherry Tomatoes sliced in half
  • 1 lb Cucumber thinly sliced, if you have larger cucumbers cut into 1/4 pieces.
  • 1/2 red onion finely diced.
  • 1/2 cup Rice Vinegar
  • 1/4 cup Extra Virgin Olive Oil ( I used De Cecco )
  • Crumble Feta Cheese
  • Cracked Black Pepper & Sea Salt

Simple Tomato Cucumber Salad

Salad Directions

  • Slice and dice everything except the feta cheese and place in a large bowl. Toss with olive oil, rice vinegar, black pepper and sea salt. Allow salad to sit and marinate for at least 10 minutes before enjoying, to really allow the vinegar, olive oil and seasoning to soak in.
  • Spoon onto your plates and top with crumbled feta cheese & Enjoy!

Simple Tomato Cucumber Salad

Juicy cherry tomatoes paired with crisp cucumbers and crumbled feta to make a delicious simple salad in no time at all.

Course Salad

Ingredients
  

  • 1 lb Cherry Tomatoes sliced in half
  • 1 lb Cucumber thinly sliced , if large cut in 1/4 pieces
  • 1/2 Red Onion Finely Diced
  • 1/2 cup Organic Rice Vinegar
  • 1/4 cup Extra Virgin Olive Oil
  • 1 container Crumbled Feta Cheese
  • 1 Cracked Black Pepper
  • 1 Cracked Sea Salt

Instructions
 

  • Place Everything but the feta cheese in a large bowl and toss with extra virgin olive oil and rice vinegar
    Allow the Salad to sit and marinate for at least 10 min before enjoying, this allows the flavors and seasonings to all mix and mingle together.
    Spoon on to your plates and top with crumbled feta.
