I have to admit I am a curry lover, the more things I can find to put curry in the happier I am! This shredded curry chicken salad is an easy way to spice up, literally, your chicken salad. There are so many incredible health benefits to adding curry to your meals & this recipe might just become a weekly lunch staple to take to work!
This Curry Chicken Salad is really simple to throw together. I make it even easier on myself when I don’t have time to roast a chicken, I pick an organic rotisserie chicken up at the grocery and you are already half way there.
Curry has so many incredible health benefits starting with fighting inflammation, boosting metabolism, combating cancer, and the list goes on and on. So many ways to get this amazing seasoning into your meals and benefiting your body.
Shredded Curry Chicken Salad Recipe
- 1 organic rotisserie Chicken
- 2 Tb Curry Powder
- 3 Tb Chosen Foods Mayo
- 4 Tb Bragg Apple Cider Vinegar
- 1 cup Trader Joes Thai lime & chili cashews
- 2 Tb fresh Basil sliced

Chicken Salad Directions
- Remove all meat off the chicken and place in Kitchen Aid mixer with the paddle attachment to shred or you can hand shred with two forks.
- Place all ingredients except cashews and basil in a separate bowl and whisk to combine.
- Pour the dressing over the chicken and stir until evenly combined.
- Chop cashews into small pieces to have in each bite.
- Slice basil into thin strips.
- You can pour cashews into bowl and stir to combine or you can top you individual portions with the cashews and basil. This can be up to you. I personally like to add the cashews and basil to each portion right before eating. This keeps the cashews crunchy and the basil fresh and ensures I will have enough in each portion.
This recipe is super simple and easy to put together but really packs a punch of flavor. It allows for you to have a flavorful, protein packed meal and feel satisfied with all the textures, flavors and goodness in each bite.
