They are so easy to whip together and I am obsessed with my new mini waffle maker. It cooks up these ego sized waffles in 1-2 minutes, making whisking the batter, the longest part of cooking.

But, seriously, how darling is this Dash mini waffle maker? It fits in one hand and we found out we can even use this on our camping trips! OMG, can you imagine? Pumpkin Spice Paleo Mini Waffles
I used Birch Benders pumpkin spice paleo mix for this recipe and I am reporting back to let you know it is delicious. So easy to make waffles with only adding oil and water and you are set to enjoy.
I tripled the recipe since these were being made for my husband’s birthday breakfast and he loves a good brunch. I also decided to grab a can of coconut cream and some pecans to top these pumpkin waffles with. The pairing of the pumpkin, coconut and toasted pecans makes each bite almost like dessert.
Pumpkin Waffle Ingredients
- 1 1/2 cups pumpkin spice mix
- 1 cup water
- 3 Tbsp oil ( suggested coconut, could use avocado as well)

Mini Waffle Toppings
- 1 can Coconut Whipped Cream (can sub for heavy whipping cream)
- 1 cup Toasted Pecans ( can sub for almonds, walnuts, macadamia nuts)
- Bourbon Maple Syrup
- Grass-fed butter
- Sprinkle Pumpkin Pie Spice

Waffle Making Instructions
This tiny waffle maker heats up in a matter of minutes and cooks your waffles even quicker. I prepped the batter before plugging in the waffle maker in. Once heated, spray with a tiny bit of non-stick spray and I used a heaping Tablespoon to make each waffle. Cook your waffle until the light goes off on the Dash. I like my waffles a bit on the crispy side so I left mine in for a minute or two longer.

I plated my waffles in two different ways and I have to admit I liked the single layer waffles with the coconut whip and pecans better. It allowed for me to really get a good dollop of whip paired with pecans and slice of waffle in every bite. I also thought that the coconut whip brought out the flavor of the pumpkin spice better than the regular whip did.
Whipped Coconut Cream Instructions
Place 1 can of coconut cream in the fridge overnight or in the freezer 10-15 minutes before using. This helps solidify the cream and makes it easier to separate when you are ready to whip. Place the cream in a bowl or kitchen-aid and whip until soft peaks form. If you are using heavy whipping cream, place the cream in a mixer and mix until soft peaks form. You can add a little sugar or cinnamon to add a little extra to either whipped cream.
Toasted Pecan Instructions
Place oven on broil low, I always suggest low because high cooks so quickly and I have burned my fair share of items because of it.Pour pecans on baking sheet and place in the oven. Watching really closely, remove the pecans when toasted. You can crunch them on the baking sheet or place in a bag and break them up that way.

Ingredients
- 1.5 cups Pumpkin Spice Paleo Pancake & Waffle Mix
- 1 cup Water
- 3 Tbsp Oil Coconut, avocado, olive oil
Toppings
- 1 can Coconut Cream can sub-heavy whipping cream
- 1 cup Pecans can sub walnuts, almonds, macadamia nuts
- 1 bottle Bourbon Maple Syrup
- 1 stick Grass-fed butter
- 1 jar Pumpkin Spice Seasoning
Instructions
- Add waffle mix, water, and oil together in a large bowl and whisk together. Turn Dash waffle maker on and wait til hot and ready. Spray with non-stick spray and add 1 Tbsp batter to the waffle maker and close. Allow waffle to cook until the light goes off. If you like your waffles a bit crispy, leave in for a bit longer. Once the waffles are cooked, place on plate and top with whipped cream and toasted pecans.
