I was always amazed, inspired & honored to have a place at the table watching her do her magic. Grandma Franklin always made the most amazing potato salad using the freshest herbs and a healthy helping of vinegar. I could never get enough of that potato salad and thought why not test it on some eggs, that is how this delicious, classic egg salad recipe was created!
Well, I think you can see that the testing went well and this egg salad is not lacking in the herbs or vinegar department. I tend to like a lot of flavor in my foods, it helps me feel more satisfied at the end of the meal as well as a little party for my tastebuds. You could say I learned a thing or two from my Grandma Franklin & I wouldn’t be the chef I am today without all the experiences and memories I shared with her. With that being said this quick egg salad came from some inspiration from her. I wanted to create something that had so much flavor it lit up your taste buds!
So, without further ado…. here are the ingredients you have been waiting for to make this simple and healthy egg salad recipe.

The Best Egg Salad Ingredients
8 Hard Boiled Eggs
¼ cup Mayo
1 tbsp Dijon Mustard
1-2 tbsp Apple Cider Vinegar
1 tbsp chives (chopped)
2 pieces Double Smoked Bacon
¼ tsp Smoked Paprika
¼ tsp Cayenne (**Optional)
2 pinches of Ground Black Pepper & Sea Salt
Ready to learn how to make the best egg salad for epic sandwiches?
Place eggs in an Instant pot and press the egg setting high pressure for 3 minutes, closing the valve on the lid. Once finished, peel the eggs, roughly chop them, and place them in a bowl. In a separate bowl combine Mayo, Dijon Mustard, and Apple Cider Vinegar. Whisk all everything till combined, and set aside. Chop the Double Smoked Bacon and add to the eggs, then pour the dressing over the eggs and bacon and stir till combined. Once combined, sprinkle, paprika, cayenne, chives, salt, and pepper over the mixture and stir once more.
You can spoon this mixture onto bread for a traditional sandwich, lettuce wraps, eat on its own, or as a dip using chips or crudites to serve.
