I am so excited to be introducing these glorious Morning Glory donuts to the blog! These have been one of my favorites to make and a crowd-pleaser for sure. This recipe is super easy to make and even easier to eat! Be sure to double or triple the recipe to ensure that you will have some when you have a craving.
I really love this recipe because it includes some protein packed nut butter to help you stay full longer and more satisfied after eating one of these delicious donuts. Perfectly paired with a cup of tea or coffee in the morning or a quick afternoon snack to hold you over til dinner. These are not your normal donuts, they have some superfoods tucked in and having them baked instead of fried is always better. That being said, you don’t have to feel guilty about indulging in one of these beauties.

I topped these Paleo Morning Glory donuts with the nut butter but you could top them with any of your favorites. I think shredded coconut, finely diced raisins or berries, or maybe finely diced apples or pineapple to go on top would be delicious as well.
Any way you go about making these I think you will find they turn out well.
Morning Glory Donut Recipe
8 Eggs (Room Temp)
½ cup Coconut Sugar
2-tbsp Light Honey
2 tbsp Pure Maple Syrup
2 tbsp Molasses
6 tbsp Warm Water
6 tbsp Coconut Oil (melted)
1 ½ tsp Pure Vanilla Extract
1 cup Coconut Flour
½ cup Arrowroot Flour
2 tbsp Ground Cinnamon
2 tsp Baking Soda
1 tsp Fine Sea Salt
2 Carrots (finely grated)
2 small Fuji Apples
½ cup Golden Raisins / Berries (Navitas Organics)
½ cup Chopped Fresh or Canned Pineapple
1 ½ tsp Bragg Apple Cider Vinegar
Donut Preparation
Preheat oven to 350 degrees F & spray donut tin with non-stick spray. I like to use Chosen Foods Avocado oil spray for my baking, it doesn’t have a taste and does a great job.
Place eggs in a kitchen aid mixer or use a hand held mixer and blend until frothy. Add all ingredients from coconut sugar down to sea salt and mix until batter is smooth. Fold in carrots, apples, pineapple, raisins and vinegar until just mixed. Divide batter evenly among donut cups, filling about 2/3 full. Bake for 20-22 minutes, until toothpick is inserted and comes out clean. Remove from oven and allow donuts to cool on wire rack. Drizzle with any nut butter (almond, peanut, cashew), making sure it is thoroughly stirred and runny before drizzling.

These donuts are delicious in the morning paired with a cup of tea or coffee or as a mid-afternoon snack. I drizzle the donut with the nut butter right before eating, if you are going to store the leftover donuts I would wait to drizzle them. This just allows for the donuts to stay fresh and also look pretty with the perfect drizzle applied right before eating.
