Being from Idaho I feel the need to represent with an incredible Loaded Smoked Potato recipe! These potatoes were smoked in my Traeger creating a smoky crisp skin with a perfectly cooked inside. This recipe takes me back to my childhood when my dad would make the best loaded potatoes not skimping on any ingredient.
This recipe to make these little potatoes of heaven is an easy one and one that will get you hooked on bacon on the smoker! Yes, I just said bacon on the Traeger. My friend Nick @smokedmeatsunday taught me how to make this “crack” bacon and I have never made it any other way since. There is something so good about perfectly cooked, crisp, smoky bacon! I think it is so important to locally source your food or atleast have a farm that you know, respect & source from. How to smoke bacon.
- Heat Traeger to 250
- Place bacon on & leave it. The timing will depend on the thickness of your slices. I left mine on for 45 min & then turned the heat up to 300 for an additional 10 min til the bacon was perfectly crisp.
- Remove from smoker and place on cooling rack to allow any oil to drip away and bacon to keep crisp.
Smoking Potatoes
- Heat Traeger to 350
- Wash potatoes and prick with form and place on smoker.
- Again, timing will depend on the size of the potatoes you are using. Mine for this recipes were probably small to medium size. I let cook for one and half hours until the skins were crisp and the potatoes soft upon squeezing.
Assembling Potatoes
- Crumble or chop your bacon to desired size, slice the green onions and cut your potatoes down the middle, try not to cut all the way through. Keeping a bit of skin on the bottom allows for you to pack the potatoes to the brim.
- If you are using ghee, take about a teaspoon and rub it inside the potato and allow it to melt.
- Now is the fun part of deciding on your toppings. I personally scooped a dollop of organic sour cream, crisp bacon and sprinkled with green onions. Finishing it off with a couple crack of Mollys Mills seasoning .
- And now….. Enjoy Every Single Bite!

- Traeger Smoker
Ingredients
- 5 medium Idaho Russet Potatoes
- 6 pieces uncured Bacon McIntyre Pastures ( used code : vitality at check out for $15 off your first order)
- 1 container Organic Sour Cream sub for plain coconut yogurt if you don't eat dairy
- 3 Green Onions Sliced thinly
- 1 Mollys Mills Southern Seasoning
- 1 Fourth and Heart grass fed ghee
