If you can’t beet’em, eat em! I know not everyone is a beet lover but I have to admit this Kohlrabi Beet Salad might make you one! The flavors that come together in this salad are so fresh and such a great crunch with each bite.
This salad brings together so much crunch from the beets and kohlrabi and pairs it perfectly with the citrus & olive oil dressing. The flavors are so complex and fresh it blows your taste buds away! Each bite being full of nutrient dense ingredients to fuel you and carry you through you day!
Salad Ingredients
- Kohlrabi – 3 cups peeled & sliced
- Beets – 3 cups peeled & sliced
- 3 Tbsp Parsley minced
- 1/2 tsp Sea Salt (I liked Maldon Smoked Salt)
- 1/2 tsp Black Pepper
Peel and sliced both the kohlrabi and beets and place in bowl. Add minced parsley, salt and pepper and toss.
Salad Dressing

- 1 orange juiced
- 2 lemons juiced
- 3 limes juiced
- 3 Tbsp Extra Virgin Olive Oil
Whisk the juice and olive oil together and pour over salad. Allow to sit for 10 minutes, tossing every 2-3 minutes to even disperse & soak in.Optional*** Top with sunflower seeds and crumbled feta or any kind of seeds, nuts or cheese you prefer. I thought that it gave it a nice crunchiness and creaminess with each bite!

This might be one of the simplest salads I have ever made but it continues to be one of my favorites! On repeat on my meal plan when beets and kohlrabi are in season & ripe for the picking!
