Are you ready for a mouth full of goodness? This summer peach ricotta toast is insanely delicious! The amount of flavor that comes together in this recipe is incredible with the limited amount of ingredients. I don’t think there is anything better than a summer peach. Perfectly ripe, bursting with juiciness and waiting to be enjoyed in the summer sun. It is one of my personal summer favorites, which is why I created this toast to have a reason to enjoy every single slice.
The ricotta mixture is a combo of sweet and spicy with a touch of herbiness. I think this mixture could be used in so many ways. On this toast, in eggs, a topping on a pizza, I could go on and on, it just makes things delicious. I personally use rosemary sourdough bread because I love sourdough. I think the flavor pairs nicely with the spicy ricotta and sweet peaches.

Toast Ingredients
- 1 loaf rosemary sourdough bread
- 10 oz full fat ricotta cheese
- 1 tsp Chili onion crunch sauce (Trader Joe’s)
- 1 Tbsp Honey
- Fresh Thyme
- Peaches
- Couple cracks Sea Salt & Cracked Black Pepper

Toast Directions
- Toast the bread to your desired texture and crunch. I personally like a good crisp to my toast.
- While you are toasting the bread, mix all the ingredients in the ricotta. I like to use my kitchen-aid to mix but you could use a hand mixer or just mix by hand.
- Once toast is done, place on plate and spread the ricotta on top. I like a good layer on mine so I did 2-3 tablespoons in my slice of sourdough. This will vary depending on the size of your toast and desired consistency.
- Wash and slice your peach. I wanted to be able to fit the bite in my mouth so I sliced my peaches on the thinner side so that it wasn’t a strugge to fit. Layer the peaches on the toast & drizzle with a little extra thyme, honey, and chili onion crunch sauce.
- The ricotta stores well so you can make once and enjoy these insanely delicious summer peach ricotta toast all week long.
