The Juiciest Grilled Pineapple Pulled Pork Tacos
I am the type of person that stuffs as much meat and toppings into each tortilla shell as possible. I love flavor, texture, taste, and spice, literally can’t get enough in each bite. These tacos do a great job of bringing all these things together to make each bite better than the last.
Ok, without further a do…. Here are all the things you will need to make these insane grilled pineapple pulled pork tacos!

Pulled Pork Ingredients
- 3 pounds pork shoulder cut into 4 large pieces
- 2 cups Classic BBQ Sauce ( I used New Primal for this recipe)
- 2 Tbsp Apple Cider Vinegar
- 1 tsp onion powder
- 2 tsp garlic powder
Place the pork in a greased instant pot. Whisk the bbq sauce, ACV, and seasonings all together and pour over pork. Set the instant pot to meat setting, pressure cook for 45 minutes, and allow the valve to self-release. Remove the pork and shred with a fork or place in your kitchen-aid for an easier way to shred. You can keep the sauce from the instant pot and pour it over the shredded pork. Or, toss and use new BBQ sauce to pour over the pork. Totally up to you and your personal preference with sauces.
Grilled Pineapple Prep
- 1 Pineapple
Take one large, ripe pineapple remove the skin, and slice it into 3-4 inch long triangle slivers. This way of cutting the pineapple makes it easier to lay across the grill. Place the pineapple on the grill on low to medium heat and rotate the slices until all sides are grilled.
Taco Prep
- 1 red onion
- 1 bunch cilantro
- 1-2 packages corn tortillas
Dice 1/2 a red onion and mince the cilantro. I personally love the smoky flavor added to the tortillas with crisping them up on the stove. Just place tortilla over a gas stove burner and allow it to crisp. I use a pair of tongs to grab the tortilla to not burn my fingers with trying to flip.
Building your pulled pork tacos

Gather all of your prepared ingredients together to make it easy to fill your tortilla shell. I recently purchased these fun taco holders off amazon and they have become a must-use for taco night. You have the option to use the two or three taco side of the holder. Just a fun way to showcase your tacos and wow your family or friends.

- Dice 1/2 a red onion and mince the cilantro. I personally love the smoky flavor added to the tortillas with crisping them up on the stove. I haven't tried it on an electric stove top, I have gas burners and just set them on low and rotate the tortilla on both sides until perfectly crisp around the edges. I use a pair of tongs to grab the tortilla to make sure I don't burn my fingers with trying to flip, an oven mitt works too.
