Looking for an irresistible spring recipe that will wow your tastebuds? You have come to the right place! This epic and easy spring mushroom toast is just what you are looking for. There is nothing better than leaving behind winter foods and welcoming in the light spring foods. I think because we go so many months without freshly grown produce, it makes everything seem to burst with flavor.

In this recipe, I wanted to incorporate some of my favorite spring flavors. I chose ingredients that are in season and pair nicely together. I am lucky to have the Boise Farmers Market starting back up here in Boise. This farmers market allows me to not only source locally but eat seasonally. It is a one-stop spot close to my home where I can shop weekly for freshly made and grown items.

I was able to grab two bags filled with his amazing mushrooms to create this epic and easy spring mushroom toast. For this recipe, I incorporated King Trumpets, Snow oysters, Shiitake, Blue oyster, Pioppinos, and Lions Mane mushrooms. It was incredible to feel the difference in texture with each mushroom, I knew the taste of these mushrooms would be incredible.

How to make this epic and easy mushroom toast

How to make an epic and easy spring mushroom toast. Filled with spring flavors and texture.

This toast comes together effortlessly. I love creating recipes that don’t take a ton of time or ingredients, yet pack all the flavor. This epic and easy mushroom toast definitely fits the bill. It comes together with simple ingredients yet creates a fully loaded, super flavorful toast that will blow you away. I tried to grab most of my ingredients from local suppliers because I love supporting locals. Being a small business myself, I know just how impactful it can be to have sales. If you are living in Boise, try and check out the Boise Farmers Market to grab groceries this week. If you aren’t in Boise, try and find the nearest farmers market or coop to support locals too.

Ingredients you will need for this spring mushroom toast

  • 4 slices of fresh bread
  • 1/2 cup extra virgin olive oil 
  • 1 container of whipped cream cheese 
  • approximately 3-4 cups chopped mixed Ferg’s fabulous mushrooms
  • 3 Tbsp butter 
  • 2 Tbsp of Fresh Dill
  • 2 Tbsp of Fresh Thyme
  • 1/2 Lemon juiced and lemon zest for garnish 
  • Flaked Sea Salt, I love Maldon salt
  • Cracked black pepper 
  • 1/4 cup Balsamic Vinegar
  • Micro-greens to garnish

Direction on how to make the epic spring mushroom toast

Start by slicing your bread, spreading olive oil on top, and broil in the oven until golden brown in color. Roughly chop your mushroom and melt butter in a cast iron skillet. Add mushroom, salt, and pepper, and sauté for 7-10 minutes. You want your mushrooms to cook down and absorb the butter. Add balsamic vinegar and set temp on low. The mushrooms will absorb the balsamic vinegar and continue to saute. Mix cream cheese, fresh dill, and thyme and stir until evenly combined. Add lemon juice to the mixture and mix again. Top the toast with a healthy helping of cream cheese, then add your mushrooms, and micro-greens and finish with lemon zest. 

Your toast should be fully stacked by this point. I loaded my toast up so much that it was hard to get a bite but believe me I did. There is too much goodness in this fully loaded-toast to miss out on this deliciousness.

  • 1 cookie sheet for toasting your bread
  • 1 sharp knife for cutting the bread and chopping ingredients
  • 1 bowl mixing the whipped cream cheese
  • 1 zester for zesting the lemon
