3 ingredient High Protein Ice Cream
This ice cream has so much protein in every bite. Good Culture cottage cheese has 14 grams of protein in a half cup. Using 2 cups of cottage cheese makes this high-protein ice cream packed with over 50 grams of protein in every batch. Using full-fat, double-cream cottage cheese, allows the ice cream to be so creamy. I honestly was shocked but just how rich and creamy the blended cottage cheese was. Adding the maple syrup and pure vanilla extract was the perfect combo to bring that bit of sweetness to the base.
- 2 cups cottage cheese, I love using good culture
- 1 Tbsp pure maple syrup
- 1 tsp pure vanilla extract
Start by adding the cottage cheese, maple syrup, and vanilla extract to the blender. Blend until evenly combined. If you want to add in some of your toppings to the base, now is the time to do it. You can either blend it completely into the base or just pulse a couple of times to get it mixed in.
That is all you need to create the base of this high-protein ice cream. Then the fun begins with getting to choose the toppings that will be added.
Raspberry and Graham Cracker Add-Ins
- 1 container Raspberries
- 1 -2 cups graham crackers
I chose raspberries and graham crackers because it was my favorite combo at Coldstone. I loved ordering the plain cheesecake base and then adding in raspberries and graham crackers. This combo has always been my favorite. It is the perfect pairing of the slightly tangy base with the pure sweetness of berries and then the yumminess of crumbled graham crackers. If you are like me and love this flavor combo, then you need to make this high-protein ice cream asap! It literally has been on rotation at our house for weeks now! I think it will be on rotation all spring and summer, especially during the berry season.

Cookies & Cream Add-Ins
I did a poll on my Instagram stories asking what flavor combo you would love for me to make! Although it was pretty close, cookies and cream won the poll. I think each one of these combos would be a fabulous mix and definitely something you should give a try. As we move through the growing season I think fresh produce will be fabulous to include. Think fresh peaches, strawberries, and maybe even some fall combos like pumpkin with ginger snaps mixed in. I could go on and on with flavor combos but let’s get to the cookies and cream combo.

- 8 – 12 Oreo cookies, I used a double stuffed, gluten-free kind from Glutino but you get to decide which ones are your personal favorites.
The cookies and cream recipe is super easy since you are just adding in one ingredient. I wanted the base of the ice cream to have a great cookie flavor so I blended 6 Oreos into the base until it was creamy. I then poured the base into the loaf pan and topped it with the additional cookies. 8 to 12 Oreos so that you are able to decide how sweet you’d like your ice cream. I personally love a lot of goodies in every bite so I crunched my cookies into various sizes to enjoy throughout the whole ice cream.

Ice Cream That Is Good For You?
I don’t know if I would go so far to say that this ice cream is “good” for you. But, I will say that it is better for you than most ice creams you find at the grocery store. I love that this ice cream recipe is filled with simple ingredients, not a bunch of fillers and crap you don’t need. I also love that the cottage cheese that I used is full-fat and high in protein. These two things combined make it more satisfying to eat this ice cream. The full fat will have you feeling more satisfied and content after eating and the high protein will keep you full longer. I personally love using high-quality ingredients in the recipes that I create. I want to know that I not only taste good but does my body good. This easy 3 ingredient high protein ice cream allows you to have a treat but also fuel your body. I am not saying you should be eating this daily but the occasional sweet treat is always welcomed, at least that’s my motto and how I live. Life is too short not to enjoy yourself but why not have it be something that not only tastes good but is made with great ingredients too? Cheers to eating and living well!

Easy 3 Ingredient High Protein Ice Cream
Equipment
- 1 Loaf Pan any container to freeze ice cream in
Ingredients
- 1 container Full-Fat Cottage Cheese
- 1 Tbsp Pure Maple Syrup
- 1 tsp Pure Vanilla Extract
Possible Add-Ins
- Raspberries
- Graham Crackers
- Oreo Cookies
Instructions
- Combine the cottage cheese, maple syrup, and vanilla extract in a blender and blend until smooth.
- Decide on what ingredients you would like as your add ins. You will either add them in now and blend them into the base or you can just add them once in the loaf pan. In both flavors I blended some of the ingredients into the base and then added the rest on top. I like to do this so that the base has some of the add-in flavors but you also get the chunky add ins too.
- Pour the blended cottage cheese base into the loaf pan and then add your remaining add-ins. I liked to crunch them up in varying sizes so that you have different bites.
- Place in the freezer for 4-6 hours. I stirred my ice cream once an hour until completely frozen. This helped make sure it didn't start getting icy at the top and cause it to be uneven consistency. Scoop out the ice cream and enjoy!
