This Delicious Tomato, Basil, Cheese Galette is something you want on your plate. It is so full of flavor, texture and the taste is out of this world good. The goat cheese paired with the ripe tomatoes, fresh basil, sprinkle of EBTB seasoning all wrapped in the buttery puff pastry ….. no words. It is so good.

I have been finding every way to use up my delicious tomatoes and this might be our new favorite. This galette can be eaten for breakfast with a fried egg on top or scrambled egg on the side. For lunch or dinner paired with a green salad or protein on the side. The puff pastry stayed super crispy and added that buttery deliciousness to each and every bite.

GALETTE INGREDIENTS

  • 1 package buttery puff pastry 
  • 10 oz log plain goat cheese
  • 5 large tomatoes
  • A handful of fresh basil
  • Everything but the bagel seasoning 
  • Sub**** feta for goat cheese if you aren’t a fan.

PREPARING THE GALETTE

  • Preheat oven to 430.
  • Defrost and roll out the puff pastry dough on a parchment-lined baking sheet.
  • Crumble the goat cheese leaving about 1/2 – 1 inch on the sides to allow for you to fold the puff pastry up around the cheese and tomatoes.
  • Then slice your tomatoes into large slices and layer them on top of the goat cheese. Sprinkle everything but the bagel seasoning on top and fold the puff pastry in, pinching the sides together to secure.
  • I left mine just like this, you could wipe with an egg wash if you wanted but my crust turned out perfectly just like this. Easy, Peasy.
  • Place on the middle rack in the oven and bake for 20-25 minutes, removing when the crust is golden brown and cheese is creamy.
  • Remove from oven, slice, and devour!
  • This Delicious Tomato, Basil, Cheese Galette holds well for leftovers the next day. I would be surprised if you had any leftovers!
