I don’t know about you but I am always forgetting about bananas sitting on my counter until they are about ready to be tossed. These Chunky Monkey Muffin Tops are the perfect way to use up those ripe bananas and enjoy them instead of toss them.

Chunky Monkey Muffin Tops Recipe
- 1 cup mashed bananas
- 1/2 cup EatNuttzo Keto Crunchy Butter
- 1/2 tsp Vanilla
- 1 1/2 cups Almond Flour
- 1 tsp baking soda
- 1/4 tsp of each ( salt , cinnamon , ginger , nutmeg )
- 1/2 cup EnjoyLifeFoods Mini Chocolate Chip Morsels
- 1/2 cup Pecans (roughly chopped or in pieces)
Muffin Top Directions

- Preheat oven to 350. Using donut pans, spray with coconut oil or avocado oil to prep.
- Combine bananas, keto butter, egg, vanilla in a bowl and whisk to combine.
- In a separate bowl combine all dry ingredients except chocolate morsels and pecans.
- Add dry ingredients to wet ingredients and stir until combined.
- Spoon the batter into each donut tray, being sure to only fill about 3/4 of the way full.
- Sprinkle each muffin top with chocolate chips and pecans.
- Bake for 18-22 minutes checking at 18 & every 2 minutes to follow to ensure you don’t over cook.
- Store leftovers in Tupperware in the fridge to ensure freshness. Love popping them in the oven for a couple minutes to get them warm & melty before enjoying!
