There is something so delicious about smoked salmon paired with strawberries. You might think it sounds odd but I promise you won’t be disappointed after your first bite. The smokiness of the salmon paired with the fresh, ripe, juicy strawberries is unreal, I could talk about it all day but I’ll get to the rest of the goodness on this plate.

I kept things simple and just marinated the salmon with a good shake of @traeger Fin & Feather rub. I let the salmon sit for about 24 hours to absorb the spices. I then set my Traeger at 200 and placed the salmon directly on the grill. I’ve never had an issue with it sticking but you could always spray yours or place the salmon in a dish in the Traeger. Totally up to you. I just like it to absorb all the smoke so laying directly on the grill works great.

I leave it in the Traeger in 200 for 2 hours. I then turn the temp down to 180 for another hour and check the temp. This will depend on the thickness of your salmon but I pull mine out when the temp hits 170/175 since it rises a bit after taking it out of the smoker. I like my salmon cooked so that it almost melts in your mouth. A little crisp around the edges but the rest is perfectly cooked.

Throw some spinach in a bowl, slice up some strawberries and top with roasted, salted pistachios. I love using some pumpkin seed oil & a white balsamic for dressing with a couple cracks of salt and pepper. I think keeping it simple really allows the flavors to shine.

This is the simplest, yet tastiest meal. So fresh, clean and has a combo of salty, sweet and fresh with the greens. 
.

If you don’t have a smoker, you can still make this with baking the salmon in your oven until proper temps are met. It will still be delicious in the oven too! 
.

I grabbed the ripest pineapple and knew I needed to make something delicious with it! I always want chips and salsa so I made a big batch of pineapple salsa & it was too good to only eat with chips. 
.
.
I paired the pineapple salsa with some fresh greens, jasmine rice, ripe avocado and shredded Buffalo chicken. I wanted something that had a kick to it to pair with the sweet salsa but you could easily make the chicken with your favorite bbq sauce. 
.
.
I placed the chicken in my instapot with 1.5 cups sauce & placed it on slow cook for about 3 hours. I wanted to be hands off cooking but still have the chicken juicy and tender. I shredded it with a fork and gathered the rest of the ingredients to make the bowl. 
.
.
🥬 fresh greens 
🍗 chicken tenders 
🦬 Buffalo sauce 
🥑 avocado 
🍚 jasmine rice

🍍 Pineapple Salsa
1 pineapple 
16 oz cherry tomatoes 
1 small onion 
1 small bunch cilantro 
1 jalapeño 
1 large lime 
Sea salt 
.
.
Slice and dice the pineapple, tomatoes, onion, cilantro, and jalapeño and place in a bowl. Squeeze the lime juice over top with a sprinkle of sea salt. Toss and let ingredients mingle for 10-15 minutes before enjoying. 
.
.
You can enjoy this so many things it’s flavor is popping and so easy to enjoy. The pineapples are ripe for the picking and so juicy right now. Grab one today and make this flavorful bowl!

I have been playing with sweet potatoes and dukkah spice lately & omg it has been good! I created match stick fries a couple nights ago and made sweet potato croutons last night and wow! The flavor is unreal. 
.
.
This is such a throw together recipe to create some major flavor on your plate! 
.
.
🍠Sweet potato
🥑avocado oil 
✨Dukkah seasoning @traderjoes 
🧂Flaked Sea Salt @maldonsalt 
.
For the matchstick fries I thinly sliced 2-3 medium sweet potatoes and placed in a large bowl. Drizzled with 2 Tbsp oil & 3 Tbsp dukkah seasoning with a pinch of sea salt. Stir everything up until well coated. Preheat oven to 400 and line a baking sheet with parchment paper. Depending on thickness of your fries you will bake longer. Mine took about 15 min to crisp up.

Same recipe for the croutons but you will cut in about .5-1 inch cubes. Toss with oil, Dukkah and sea salt and bake in the oven until crisp. 
.

If you are wanting your matchstick fries or croutons pretty crispy, I recommend switching the oven to broil for the last couple minutes. But, be warned, keep a close eye bc broil burns so quickly. 
.

I have to admit I am 100% one of those people that has a craving & heads to the grocery to make it. There is something about spring and all the crunchy, juicy veggies that make me crave a fully loaded lox ‘n bagel sandwich!
.
.
I didn’t cut any corners with this stack of deliciousness. I wanted it all on there, crispy, crunchy, creamy & smoky. All flavors and textures made their way on to this tall stack. 
.
.
I grabbed some everything bagels & my favorite bacon scallion cream cheese from @blueskybagelsboise and headed home to make the sandwich of my dreams come true! 
.
.
- 🥯bagel
- 💥cream cheese 
- 🥑avocado 
- 🥬 arugula 
- 🌱dill 
- ✨ capers 
- 🧅 red onion 
- 🥒 cucumber

.
I like my bagel toasty so I double toasted it and then started layering the cream cheese, cucumber, capers, red onion, smoked salmon, sliced radishes, avocado and sprinkle of dill. 
.
.
I had to push the sandwich together a bit to get it all in my mouth, but wow! The flavors and textures that come together with this lox ‘n bagel sandwich was out of this world! 
.
.
No doubt in my mind this will become a normal rotation for breakfast or lunch in my house. 
.

I took the day to disconnect. Disconnect from social media, from my phone, from anything and everything that hasn’t felt like it’s serving me lately.

I took the day to really be present. To take all distractions away and to connect. Connect to myself, my husband, my pup, my garden, my life. 
.

At times we forget. We get caught up in the motions and forget about the moments that are passing us by. We forget to allow ourselves space to breathe, to slow down enough to really feel into what our soul is wanting & dreaming of. To fully feel into our being.
.
.
When was the last time you really allowed yourself to take a day off? A day to enjoy the simple things in life and those that surround you? What is holding you back from doing so? I can admit that I used to have fear about taking a day off. Fomo on what I’d miss... but this mindset no longer serves me. I now realize I miss out on more when I don’t take time to disconnect than when I stay connected for too long.

I got to enjoy a morning hike with my two boys ending with our favorite breakfast sandwich overlooking Boise. Getting my hands in the dirt and repotting and planting all my seedlings. A gorgeous sunset mtn bike in the boise hills to seal the deal on the day. Spending time with my little family out in nature  is what brings me the most happiness these days.

As we start a new week, maybe schedule in some time to truly disconnect. Doesn’t have to be for full days, even a couple minutes makes an impact. 
.
Here are a couple ideas ⬇️
.
📲 set a time at the end of the day to put your phone away. Maybe a couple hours before bed to spend time with your family, take a bath, or even go to bed early to get better sleep. 
.
🌳 leave your phone behind and get outside for a lunch time walk or a sunset walk after dinner. Listening to the birds chirping, watching the sun set, decompressing and releasing from the day. 
.
⏰ set good boundaries for when your work ends, when you are checking emails, etc. Making sure it doesn’t start bleeding into all areas of your life. 
.
🗓take one day off all social. Just try. See how you, your mind, your energy feels. 
.

What a flavor combo! . . Last week I got to be a What a flavor combo! 
.
.
Last week I got to be a part of a neighborhood cookbook club dinner. Something we have been doing for a couple weeks with the weather becoming nicer. One house chooses the cookbook & then we all pick a recipe to make & bring to the cul de sac gathering. We bring our chairs and sit outside on our quiet street & enjoy good food & great company. @halfbakedharvest was the featured cookbook & I chose to make her “strawberry pretzel tart with whipped mascarpone”.

We have a couple GF people on the block so I made a switch to the recipe & OMG was it good! I subbed pistachios for the pretzels and wow the salty, nutty, crunchy texture paired with the creamy mascarpone and ripe strawberries was incredible.
.
.
This is such a simple dessert to whip together and enjoy. I think a beautiful addition to an Easter table & it holds well so can be enjoyed for days later. 
.
.
🥜 - 2 cups finely crushed salted pistachios 
🧈- 6 Tbsp salted butter, melted 
🍯- 4 Tbsp honey, plus more for drizzle 
🧀- 4 ounces mascarpone 
🍋- 1 Tbsp lemon juice + 1-2 Tbsp lemon zest.
🥛- 1/3 cup heavy cream 
🍓- 2 cups sliced fresh strawberries 
.
.
Preheat oven to 350 and line a baking sheet with parchment paper. 
.
Crust:
In a medium bowl, stir together the pistachio crumbs, egg, butter & 3 Tbsp honey until combined. Pat the mixture down on parchment paper until 1/4 inch thick. Bake until toasted, 10-15 minutes. 
.
Whipped Mascarpone :
Using an electric mixer, whip together the mascarpone and lemon juice until smooth. Slowly add cream and whip until soft peaks form. Add remaining 1 Tbsp honey and lemon zest. Spread the mixture over the cooler crust. 
.
Just before serving, arrange the strawberries over the cream & drizzle the tart with honey. 
.
.
Omg enjoy these slices of deliciousness. The pistachio crust was crisp and firm on the first day but with leftovers it held its form but was more saturated with all the cream and strawberry juice. 
.
.
You could make this recipe DF by choosing a dairy free cream cheese to sub for the mascarpone.
.
.
This recipe is a true taste of spring! Fresh, juicy & beautiful with the colorful strawberries.
