I have to admit this cannellini kale crostini was a staple during my years living in Florence, Italy. It was such a simple way to throw some ingredients together for an appetizer or even a casual meal paired with a nice glass of wine. I also learned in Italy that quality ingredients really make or break a recipe. Source locally, eat seasonally & buy the highest quality ingredients you can get your hands on!

This recipe starts with the quality of the bread. I’m a sucker for all things sourdough, the flavor, the crust, pretty much everything about sourdough! I think that it can be used in so many ways to make delicious recipes from breakfast, lunch, dinner and even desserts! I was lucky enough to score a homemade sourdough loaf from a friend in Boise.

Crostini Ingredients

  • 2 cups Cannellini Beans
  • 1 tsp minced garlic
  • 1 sprig fresh sage
  • 1/4 cup extra-virgin olive oil
  • 1 large handful tuscan kale (cavolo nero) chopped thinly
  • 1/2 cup freshly grated parmesan
  • Maldon Smoked Salt
  • Loaf of sourdough bread or a french baguette (you can use any bread that works for you)
  • Optional ****
  • Red Pepper Flakes
  • Sun dried Tomatoes roughly chopped

Crostini Making Directions

Place the olive oil, garlic, kale and sage into a pot and saute until fragrant. Then add the beans and tomatoes, sprinkle with salt and add red pepper flakes if using. Saute everything for a couple minutes to get things warmed up and the kale fully wilted. Pour into a serving bowl & be ready to enjoy.

While you are cooking everything above, I recommend turning your oven on to broil low and slicing up your bread. Brush each slice with a little olive oil, this adds a bit of crispiness to each slice as it cooks. Broil can be dangerous hahah I swear you turn around for one second and things are burnt. Keep an eye on things and keep things lightly toasted.

Cannellini Kale Crostini

Crispy Bread topped with white beans, garlicky kale, sundried tomatoes and parmesan. The perfect pairing of ingredients to make a yummy snack or delicious dinner!

Ingredients
