Are you a waffle lover like I am? In my house we tend to have a weekend tradition of brunch at least one day if not both. I was gifted a Cuisinart waffle maker for my wedding and have to say I absolutely it! These buttermilk buckwheat waffles wouldn’t be so perfectly made without it!

These waffles are so easy to throw together and can be enjoyed for days after with simply storing them in the fridge. You can top them with anything that comes to mind or that you are craving. Some of my favorite toppings are

  • Coconut Whipped Cream
  • Any Nut Butters
  • Fresh sliced fruit
  • Whipped Cream and Pure Maple Syrup
  • Stewed Fruits (blackberries, strawberries, raspberries)
  • Butter with cinnamon and sugar

Buttermilk Buckwheat Waffle Recipe

  • 1 1/4 cup Buttermilk ( you can make your own non-dairy buttermilk by adding 1 Tbsp lemon juice to 1 cup milk of choice)
  • 1/4 cup coconut oil
  • One egg
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 1/2 tsp pumpkin spice blend

Buttermilk Buckwheat Waffle Instructions

Preheat waffle iron.

In one bowl mix all dry ingredients and whisk together. In separate bowl add buttermilk, melted coconut oil and egg and whisk.

Pour wet ingredients into dry and mix until only combined, it should only have tiny lumps left.

Allow batter to rest 5 min before pouring into waffle maker. Pour into waffle maker and wait for it to be done.

I tend to be a crispy waffle lover so I leave mine in longer. Take waffle out and top with whipped cream & sliced peaches. Maybe a drizzle or two of maple syrup, the topping possibilities are endless.

Ingredients
  

  • 1 cup Buckwheat Flour I used Bobsredmill
  • 1 1/4 cup Buttermilk dairy or non-dairy
  • 1/4 cup Coconut Oil
  • 1 tsp Baking Powder
  • 1 tsp Baking Soda
  • 1/2 tsp Pumpkin Spice Blend
